No-Bake Tart

We are in week 5,675 of self-quarantine and social distancing. The past few weeks have been pretty tough on me emotionally. Thus, my silence on here. Last night, I decided I just needed to make something sweet for the family. My husband had told me about a dessert from South Africa made out of powdered coffee creamer called Cremora (thus the name, Cremora Tart). I never thought coffee creamer could yield such a yummy dessert. A few weeks ago, I picked up the supplies during a necessary food run. If you are looking for a yummy, creamy, lemony, no-bake dessert, this is for your.


Ingredients


250 g/ 2 C. coffee creamer (Cremora for ZA, Coffee Mate for USA)

125 ml/ 1/2 C. water

125 ml/ 1/2 C. lemon juice

1 can condensed milk

1 sleeve of graham crackers (for ZA, 1 sleeve of tennis biscuits)

5 T. butter, melted


To make crust, crush your graham crackers. You can use a food processor or crush in a Ziploc bag. I used the Ziploc method. Add melted butter to the crushed crackers. Once combined, pour into a pie dish or spring form pan. I used a pie dish; I do not own a spring form pan. Press crackers firmly to form a nice crust. Place in fridge to set while you make the filling.


To make the filling, combine 2 cups of coffee creamer with 1/2 cup of water. Mix until there are no lumps present. Add the can of condensed milk, mix well. Slowly add in the lemon juice. You will notice the texture starts to change the more you add. There is a chemical reactions taking place. Once you have mixed in all the lemon juice, pour mixture onto the graham cracker crust.


Allow the tart to set for at least an hour or overnight. The longer, the better. You can top with fruit, whipped cream, or anything you would like to do.
