Easy as Pie

My husband was rummaging through our rolling cart in search of a snack. He found a package with 3 apples; these 3 apples needed to be used very soon. The first thing I ever made him, even before we started dating, was a homemade, from scratch apple pie. With 3 kids 2 and under, it is hard to find time to make from scratch desserts. But, if you have a few apples and about 30 minutes, you can make a delicious treat for your family.
3 apples, peeled and diced
2 tbsp of butter or margarine
1 tsp of cinnamon
1/3 of white sugar
1 tbsp of corn starch
2 tbsp of water
1 9-inch pie crust (mine is store bought for convenience)
1 egg beaten or 3 tbsp of almond milk for my vegan readers--to brush on crust
***If you are making a bigger pie, I would double the recipe.***
Preheat oven temp to 400 F, or whatever your prepared pie crust directions specify.
In a boiler pot, melt butter and cinnamon. Once melted, add in apples and sugar, stir everything together. Once simmering, cover for about 4-6 minutes. I covered mine for 6 minutes. While the apples are cooking, take 1 tbsp of corn starch and 2 tbsp of water, mix together. Once the apples are done cooking, remove from heat and stir in the corn starch water. This will help thicken the apple pie filling.
Then, I transferred the apple filling into an 6-inch cast iron skillet. Covered the skillet with the dough and made slits in the top. Brush top with an egg wash. Or for you vegans, you can use almond milk as a substitute.
Bake for 11-13 minutes, or until crust is golden brown.
Serve warm or cold, up-to-you. For an extra treat, add some vanilla icecream on top!
